Bruschetta Chicken Empty Bruschetta Chicken

Post by Liz Mon Sep 27, 2010 1:45 pm

INGREDIENTS:

1 lb boneless skinless chicken breast
Shredded mozzarella cheese
1 box chicken flavored stuffing
I can diced tomatoes
1 tsp italian seasoning
2 tsp minced garlic
1/2 cup water

Cut the chicken into little pieces, like 1 inch. Put in the bottom of a baking dish. I just use my 10 inch skillet (has to be ovenproof though!) Sprinkle with cheese. In a separate bowl mix tomatoes, garlic, seasoning, and water. Sprinkle over the cheese. Put a little more cheese on top of the stuffing. Bake at 400 degrees for 30 minutes. Can be made ahead, put in the fridge, and cooked when ready. So good with some rolls and broccoli on the side!

It's so easy! And it's really good if you use the tomatoes that have the basil and stuff in them.

Everything I make he finds something wrong with it . . .
He claims my pork chops are too dry because I cut them open to see if they were done.
He said my roast tastes like carrots (and he doesn't like carrots)

I can't please him Sad

I think you would have to cook the rice first. Otherwise it would be crunchy. You could cube bread and make stuffing. Or wait til you get stuffing. lol
