Easy Enchiladas Empty Easy Enchiladas

This feeds 2...

2 small chicken breasts (I use the frozen boneless skinless)
1 can of enchilada sauce (I use mild...I don't do spicy...)
Shredded Cheese (mexican style!)
4 flour/corn tortillas (I used the carb-friendly flour ones)\
Olive Oil (I use the spray PAM)

Fry chicken breast with 1/2 cup of water to make em' tender and juicy. Shred chicken breast.

In bowl, combine a handful of shredded cheese, shredded chicken breast, 1/3 cup enchilada sauce...mix.

Spray glass dish with pam, put mixture in tortillas, roll like a burrito, put the enchilada fold-down in the dish. Take remaining enchilada sauce and pour over enchiladas. Sprinkle with shredded cheese.

Put in oven on 375 for 20-25 minutes until all cheese has melted.

YUMMMMMMM.

I have lasagna left over for today...but I have a dentist appointment at 11:15...still haven't gotten a hold of John yet which means Reese may be going with me to the dentist Neutral

I have cold left over chicken strips from Perkins last night . . . that were not particularly good when they were warm from the kitchen.

I WILL be trying this in the near future
