Bored with dinner.
During the week it's just Wesson and I. He'll eat almost anything.
Since I was a gestational diabetic last pregnancy, I'm avoiding pasta and carbs like the plague.
I have about a half hour/45 minutes to come up with dinner. So far, I can do...
Baked Chicken with a veggie/potato (this gets sooooo old)
Fry up some burgers and tots
Ravioli/Mac and cheese for Wesson
Salad with left over chicken
Shake n Bake chicken
Tuna Casserole (when I have extra carbs for dinner)
I'm all out of ideas.
My pot roasts in the crockpot never come out good (they just don't taste like dad's old-school in an oven roaster...).
My meatballs are a weekend oven roaster thing...
I feel like I'm drained of knowing how to cook anything anymore.
Ideas?

Do you have a George Foreman?
There are tons of crockpot recipes, those would be good for you so you wouldn;t have to make dinner when you get home.

Re: Bored with dinner.
I have been feeling the SAME way.
We are going to do pork chops tonight, but I still don't even know what to make with them.
Last night we did a London broil we got CHEAP at the commissary over the weekend.
Marinated it all day and it was SOOOOO good. Did some baked potatoes and fried onions/mushrooms over the top.
We just fed the kids some bbq chicken legs we grilled up.

Hmmm...I could do a london broil and have leftovers... That would marinate in the fridge and cook in about 20 or so.

Re: Bored with dinner.
I have the kind of crockpot that has a timer so it will start later in the day. It was awesome because I used to work looooonng days, and stuff would burn.
What about a pork tenderloin? Those are delicious then you can shred the meat after and make bbq, or make it mexican and put it in tortillas.
Let me think of more...

Re: Bored with dinner.
The pork down here seems to taste funny unless it's bacon.
I dunno. The last time I had it though, it was like...a year ago. I just was turned off from some chops I got at the commy. They seemed squishy.

Meat grosses me out in general . . .
I'm pretty convinced Brayden would be a vegetarian if I let him as well.
He pretty much will only eat hot dogs and hamburgers. He can't chew any other meat for some reason lol
He chews it until it's dry then he can't swallow it

Re: Bored with dinner.
Do you go to the library? 2 books I really like are "Fix it and Forget it" and "Don't Worry, Dinner is in the Freezer." The first one is crockpot stuff, the second is like whole dinners you can freeze. The chili and tator tot casserole is amazing. You throw the whole thing in the freezer, then pull it out and ccok in when you want it. Genious.

Baked potatoes with taco meat or chili? That's a good one.

Re: Bored with dinner.
I'll have to check those books out. I don't have a clue where the library is in Garner. Nor would Wesson stay quiet enough. I can already see him ripping books off the shelves.
I like the idea of freezing the meals. That would be GREAT for Wesson and I.
I dunno about stuffed peppers. I prefer them raw.

Re: Bored with dinner.
I don't really eat breakfast. I was taking the dogs out this morning thinking about how we could come out with a tupperware dish of the FUTURE.
Put your cereal in the bowl...
The lid will have an opening in the middle with a chamber for your milk. When you're ready for cereal, you twist the lid and the milk dumps into the cereal.
CEREAL ON THE GO.
But ya...we don't do much for breakfast since I'm on the go all the time.

Re: Bored with dinner.
We don't even have those things in the house.
Well...eggs but I go through flukes where they disgust me. An egg, that came out of a chicken. That...could have been made into a new chicken...
I swear in the previous life, I was a vegetarian.

Meh, it's no worse than eating the muscle and fat of an animal. I'm just sayin'.
