ROCKS! I know you've all seen it on Pinterest. lol

I put raspberry vinagrette on the bottom, layed green olives, sliced tomato, shredded cheese, and butter lettuce.

Have you tried putting meat in yours? Does it turn out ok? I've been tossing around the idea of adding some turkey lunch meat for some extra protein.

I've been making them for DH's lunch.

Re: meat, i tried grilled, sliced chicken breasts, but he didn't like it as much as when I sent them separate. I liked it fine though.

We do too. I had to get rid of them somehow!

Seriously though, I loved it. I grilled them plain and the salad was a basic summer blend of a sweeter vinaigrette, sliced strawberries, candied walnuts (but it tasted yummy with plain ones too) and a little bit of feta. I think the hubs just didn't like having a girly salad.

Whaaaaa! You've got to try it! Well if you're a strawberry fan. Otherwise, hit up some blueberries. You can also do either mandarin orange slices or drained pineapple chunks and sprinkle it with shredded coconut.

It just sounds so weird mixing fruit with lettuce. lol

I should say though...I've been cutting out alot of lettuce since I've become bored with it. lol

I'll tear up a cucumber and tomato salad though! giggle

Try different types of lettuce. Really I prefer it with spinach, but a spring mix is good too.
