The Best Zucchini Bread Eva.
I grow zucchini...among a million other things...and this is one of my faves. We go through a loaf a day with Jon and Wesson.
It makes 2 loaves!
In one bowl, sift...
3 cups of flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons cinnamon
In another bowl, mix...
3 eggs
1 cup veggie oil
2-1/4 cups sugar
3 teaspoons vanilla extract
Add the dry ingredients to the wet ingredients, mix. Add 2 cups of grated (peeled too!) zucchini and 1 cup of chopped walnuts.
Toss the mixture into two greased/floured bread pans. Bake on 325 for an hour and 10 minutes or until a toothpick comes out clean. I bake longer in 5 minute increments.
Nom nom nom.

Sounds delish! I have tomato plants and pepper plants this year. My pepper plants JUST about died because of the heat. I finally moved them into the shade where I am HOPING they will continue to survive until I at least have one pepper!

Make sure you make plenty of room! I grew squash and zucchini for the first time this year and each plant takes up about 3'x3'! They get huge! I have 8 bags of frozen squash/zucchini. My tomatoes are dieing from this heat...I just bought a replacement cucumber... It's just too damn hot lately!

I'm growing mine in pots on the porch! So hopefully I can grow one per pot!
Yea with in 2 days I almost lost all my plants had to start watering twice a day and moved them into the shade. They only get a couple hours of sun a day now and are doing much better!

I have raised garden beds. I think next year, I'm going to stop at the army surplus and pick up some camo netting to cover the plants.
They'll still get light, just not as intense!
My pepper plants are like 3 feet tall! They're ridiculous!

ive had zucchini bread last year for the 1st time and loooooved it, but forgot to get the recipe and always forget about it, but im deff going to have to try this when we move back to nc
