Homemade Meatballs!
We had a few staple dinners growing up...meatballs being one of them.
1lb of ground beef (makes about 6 medium meatballs)
2 cans of diced tomatoes (I use 2 cans because I like maters' and put the diced tomato gravy on my potatoes...you can get away with just 1 can.)
1 can of tomato soup
1 egg
1/4 cup breadcrumbs
Put oven on 350.
Combine the egg, breadcrumbs, and ground beef in a bowl. Mix well (I used my hands so I can really get into the meat). Make your meatballs.
In a roaster (with a cover), mix the diced tomatoes and soup. Toss the meatballs on top and cover for 2-1/2 hours.
Every half hour, flip the meatballs so they don't dry out.
I serve with potatoes and a veggie! Delish and cheap and easy!
