I do both Jeannette, depends on what I am making. Applesauce has so much sugar (even if you don;t add much, just natural sugar), you can get by with water bath. I tend to use my pressure canner because I just feel better about it then....

You need a BIG pot, or teeny jars!

I've been debating on a pressure canner. Agh. Decisions.

We're going to start a garden next year. Eeeeeeeeek!

Yay! I say if you are going to spend the money just get a pressure canner. You can use it for more things. You can use it as a water bath canner and you can pressure cook in it. You can seriously make a whole chicken in like 20 minutes! Insane!
