1 - 2.5/3lb beef roast
1 - can of cream of mushroom
1 - packet of onion soup mix
1 - minced garlic clove
1/2 cup water

Optional
- Mushrooms
- Carrots

Put the pot roast in the crockpot. Separately, mix the other ingredients in a bowl. Pour the mixture on top of the pot roast (if it doesn't cover the whole roast, that's ok).

Cook on low for 8-10 hours (10 makes it fall apart). PERFECT for working moms! It makes the house smell sooooo yummy.

If you want, the last 2 hours, toss in a bag of baby carrots or some mushrooms. Drool

Serve with mash taters and pour the gravy on top.

Drool

I personally don't like all that extra soup mix and all that. Salt, pepper, McCormick makes a seasoning for roast and I sprinkle some of that in, onions and some butter and it taste pretty darn good. I usually quarter some red potatoes and put baby carrots in and cook it.

It doesn't dry out?

I'm horrible with the crockpot. ROFL I fear not putting juice/gravy in because I don't want to ruin the meat!

Mmmmm...buttery red potatoesssss.

I think I cooked it like 6 hours on high....can't remember. Since the meat is simmering in the water it turns the water into a gravy of sorts. Its good and simple the way my grandma used to make lol

Mmmm. So it's like a beef broth.

I can do that...with some onions and carrots in the mix. Drool

We used to make ours in a roaster with boullion cubes. I don't have time for THAT way anymore. Into the crockpot she goes. lol

Oh for sure why don't you throw a beef boullion cube into that water and mix it up before pouring it in. That would add some extra beefiness to it. I would have the other day but didn't have any boullion.

Can you get a 1lb roast? That way you wouldn't have to eat as much leftovers. Or you could do like open face sandwiches...toast your bread put them on the plate, put taters on top, meat on top of that, drizzle some gravy, then put the leftover potatoes and carrots on top. Yum.

I could give that a shot. If I try it with your recipe, a small one would be just fine... I wouldn't have too much gravy or anything like that.

Mmmmmm

I left my Roast out overnight Sad
Don't think I can eat it now . . .
I dumped some steak marinade in with mine and let it cook.
