Jon's Chicken Quesadilla-chilada-taco-itas.

Ya, he had me thinking quesadillas, they weren't but they're DELICIOUS and guilt-free.

for ONE serving:

2 carb balance flour tortillas (Mission makes them)
1 dab of light sour cream (if you prefer it)
chopped chicken breast, seasoned with chili powder, paprika, pepper, salt, garlic
1/2-1 cup of shredded low-fat mexican fiesta cheese
diced red pepper, diced jalapeno, diced white onion.

Prepare the chicken breast with the seasonings in a frying pan

Take a tortilla, on LOW heat, and slap some cheese on there
Top it with some chicken breast chunks, pepper, jalapeno, and onion
slap some more cheese on there
Put on the top tortilla

Let the cheese melt enough where the tortillas stick together
Flip it (he took the whole small frying pan and flipped the tortilla in his hand, and then back in the pan...don't ask)
Wait for the cheese to finish melting and then cut it in quarters with a pizza cutter.

Spread a little bit of sour cream (if you like it), and enjoy.

I didn't want to say anything because he was so proud of himself but next time I'm tossing in some tomato and MAYBE some salsa.

They were really good but I think if I would have suggested anything else he would never cook for me again.

...Jeannette...this is the same thing I make for Quesadilla's...except I just used Rotel (chopped tomatoes and chilies)

Although I don't use healthy anything when I made them. But that is a simple fix. Plus we get wheat tortillas with WIC!

I went shopping this weekend and compared some labels. I bought light miracle whip for sandwiches and you can't taste a difference.

On the other hand, my italian dressing had minimal difference compared to light. So I stuck with what I normally buy.

And I saw not much AT ALL of a difference in carbs in pasta. I was pissed. Everything is still like 40 carbs.

Yeah I looked at all kinds of 'gehetti noodles and didn't find any difference in them. It was sad

It's hard! Calories vs. Carbs kicks my ass!

If I eat just enough calories, I'll go over on carbs.

Yesterday I had to snack a little because I was under in carbs, but way too much under in calories. I was only like 1,000.

I think I gave up on the counting lol
It's too hard when you have a husband that will only eat McDonalds

Oh man, I'm hardcore. I lost 5 pounds already. I can sit on my ass and eat better.

I'm getting burnt out on counting calories. Blah. Once I start going to the gym I probably won't be doing the counting calories anymore. Its just getting myself to actually go to the gym for the first day because I know I am going to die

I love it. I feel obligated to eat better.

I'm feeling better too. To a degree. My water intake is up ridiculously. I bought some 100 calorie snack packs. It's just the discipline not to eat the whole damn box.

Just got back from Walmart. Bought some lean cuisines and some smart ones warm up dinner...maybe I won't feel so burnt out if I'm not trying to think of things to cook

I think you can see my diary. If you want, snag some ideas from there if you eat similar stuff.

I just have hit a lull ...the kind were I don't want to cook anything. I go through stages like this a lot. I'll be a fanatic cook for a month or so...then for a few weeks I don't want to cook anything

I know I'll get my oopfh back soon. I bought a magazine with some recipes in it that I'm excited to try.

I was like that yesterday. I swear my kid doesn't live off of Ravioli...............
