Fiesta Lime Chicken
I fell in love with this. Some of the ingredients sound odd but...it's delicious and juicy!
4 boneless skinless chicken breasts
1 cup water
1/3 cup Teriyaki sauce
1 tablespoon Worcestershire sauce
1 lime (juice)
1 minced garlic clove
1/2 teaspoon salt
1/4 cup mayo (I used light and it turned out good)
1/4 cup sour cream
1/4 cup salsa
1 tablespoon milk
1 tablespoon spicy seasoning
1/4 Texas Pete Hot Sauce! (optional of course...)
Shredded cheese (to cover chicken...I used colby jack)
Marinade
Combine in bowl...water, teriyaki sauce, juice from 1/2 of lime, garlic, salt, worcestershire sauce
Marinade chicken breasts at least an hour in a ziploc bag (I usually marinade all day...in the morning and then make it when I come home...)
Sauce
Combine in bowl...mayo, sour cream, salsa, milk, spice, hot sauce.
Broil or grill chicken until cooked through.
(I bake my chicken in a Pyrex dish on 325 for about 40 minutes and that gets them soft and juicy.
Spread sauce all over chicken breasts, cover with shredded cheese, put in oven until cheese melts. (about 15 minutes +/-...)
I make mine with mashed taters!

MMM sounds pretty darn good. Maybe I should fix that and let John grill them.

I always got Fiesta Lime Chicken at Applebee's. This sounds like it's the same thing!

Re: Fiesta Lime Chicken
I made this after I had it at Applebee's a few years ago. It's so good when it's homemade!
