Chicken and Rice Soup

Just boil some water. Then add chicken (either on the bone or off). Boil until chicken is white all the way through. Remove chicken **keep water on a low simmer** cut up chicken into small bite size pieces, put back into water. Add 1-2 cups of rice (old school rice, not Uncle Ben's instant ). Add diced celery and carrots.... let simmer until rice is cooked. Serve!
