Italian Cabbage Casserole
1 medium head cabbage, coarsely shredded
1 pound lean ground beef
1 can (14-1/2 ounces) diced tomatoes, undrained
1 jar spaghetti sauce (get the kind with peppers and onions)
1 tsp Italian seasoning
1/2 teaspoon minced garlic (the kind that comes in the jar)
1/2 cup shredded part-skim mozzarella cheese
Directions:
Place cabbage in a steamer basket (I use a strainer in a big pot since I don't have one); place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 6-8 minutes or until tender. Drain and set aside.
In a large nonstick skillet over medium heat, cook and stir the beef until no longer pink; drain. Stir in the tomatoes, spaghetti sauce and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.
Place half of the cabbage in a 2 quart baking dish coated with cooking spray; top with half of beef mixture. Repeat layers (dish will be full). Sprinkle with cheese. Bake, uncovered, at 350° for 30 minutes or until heated through
Why my obsession with cabbage? It's cheap, easy, fills you up, and you can hide the fact that there are veggies (usually, not so much in this recipe). I love this recipe. You can make it in the morning and throw it in the oven later. I make it before class in the morning, so I can come home and study and don't have to worry about dinner when I get home. I like to use Italian sausge in place of the hamburger too. I want to try to add rice, I think that would be awesome.
