Vegetable Beef Soup Empty Vegetable Beef Soup

This really is good, hearty and SO simple.

1lb ground beef
2 cans of "Veg All" (Basically its a can of veggies that has corn, carrots, celery, etc all in one can)
1 can of diced tomatoes
1 can of tomato juice
salt and pepper to taste

Put undrained cans of veg all, diced tomatoes, in a large pot. Turn the heat on and bring to boil. You may decide that there is enough liquid in yours but I like mine liquidy so I can sop up crackers.
(if you get the cambells tomato juice in the juice isle it has salt in it so don't salt until you decide if you use the tomato juice or not) because it can become to salty in the end.

Brown the beef while the veggies come to a boil.

Put beef in with the veggies (I don't drain my beef I just scoop it right out of the pan that way I can get some of the fatty goodness in with the soup).

I just let for a simmer and when the veggies start looking good is when I declare it DONE!

I never thought to use ground beef in soup . . . good idea!
