Best Baked Potato Soup EVER!
In a crockpot:
Add one can of cream of potato soup - Add as many as you want depending on how much soup you want. For every can of soup you add, add a can of milk (I use skim milk). Stir.
Chop/dice potatoes (skinned or not skinned doesn't matter) - throw into the pot.
Fry some bacon (I use fat free turkey bacon) grate into bacon pits and throw into the pot.
Add a handful (up to you really how much) of shredded low fat cheddar cheese.
Allow to cook in a low cooker for about 5-7 hours until potatoes are tender.
It is FABULOUS!

Yum sounds DELISH. I've been looking for a good potato crock pot recipe so I think I'll try this one for this evening!

I don't add onion.... I just add the real potatoes and the bacon and I think it has great flavor... I don't even add salt and I love it. But you may decide differently!

You'll love it! Let me know how it turns out. It really needs to cook for several hours for the potatoes to get tender..... and it will be really thick and hard to stir at first with the cream of potato soup and the milk.... but just keep stirring and it will blend nicely as it gets warm.

Yeah I might have to wait until tomorrow to do it since its pretty late already. I planned on having lunch earlier but just got around to fixing my lunch so I'll probably just do it tomorrow. Not sure what to make for dinner tonight...maybe I'll make John take me out

I use white potatoes but I don't think it matters. I think mine are called Idaho spuds white potatoes.....?????

Ya just the regular 3 or 5 pound bag... You think something like that would be good to freeze?

I use about 5 potatoes diced into small pieces for a crock-pot full...... I don't think I'd use a whole bag because the cream of potato soup has small chunks of potatoes in it. I just like adding my own because it makes it heartier and I think the real potatoes give it better flavor. I would say about 5 good size potatoes for a whole pot full.
I think it would be fine to freeze. We usually make ours on Friday and eat on it all weekend long just keep putting it in the refrigerator and then reheating.

Ooooo. I can add some chopped green onion too. I think I might do this. How many cans did you need for a crockpot full?

Jeannette I used two cans and with two cans of milk and next time I'll probably use three cans of potato soup and three cans of milk to fill up the crock pot.
I diced up about 4 or 5 red potatoes (with skin) and used the Oscar Myer real bacon bits. I added some season salt, pepper, a scoop of sour cream, handful of cheddar cheese and two tablespoons of butter. Its starting to taste really good!
At first without adding anything it tasted a lot like clam chowder to me but with the addition of everything else its starting to taste more and more like a rustic type potato soup!

DELICIOUS! I made it and it lasted about 3 or 4 days or meals.
I used REAL bacon, fried it up and chopped up about half a pound (ate the other pound in sammiches), and used 5 russet potatoes with 2 cans of soup and 2 cans of milk.
The only thing I would have done differently was tossed the green onions in at the END. They were all mushy so I had to add more...but it was delicious. I used a ton of salt and pepper. I may make it again in a week or so.

I think I'll be making it for dinner this evening. Trying to make sure I am making things Reese can eat. Since he is on a non crunchy diet and nothing to chewy.
